Chorizo burrito

Ingredients

  • 500 g of Palacios chorizo
  • 300 g of red onion
  • Diced
  • 1 jalapeño
  • Diced without seeds
  • 4 eggs
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • 1 tablespoon of olive oil
  • 4 flour tortillas
  • 1 avocado - diced
  • Cilantro
  • ½ cup of grated cheese
  • 2 tablespoons of salsa verde

A burrito filled with the full flavor of Palacios chorizo.

Preparation:

  1. Heat a large frying pan over a high heat and add the chorizo. Cook until completely cooked and brown, about 5 to 6 minutes.
  2. Add the red onion and cook until tender. Add the jalapeño and turn off the heat. Remove the chorizo mixture from the frying pan and set aside.
  3. Beat the eggs with salt and pepper.
  4. Heat the same pan over a medium heat and add olive oil.
  5. Add the beaten eggs and remove from the pan after about 1 or 2 minutes.
  6. Toast the tortilla in a clean frying pan until it is hot.
  7. Fill with the mixture of chorizo, scrambled eggs, avocado, cilantro, grated cheese and salsa verde. Repeat with the remaining tortillas.
  8. For each wrap, fold two ends over the filling then hermetically roll, finishing off with the join underneath.
  9. Enjoy!
