Chicken & chorizo jambalaya

Chicken & chorizo jambalaya

Ingredients

  • 1 tablespoon of olive oil
  • 2 chicken breasts
  • Chopped
  • 1 onion
  • Diced
  • 1 red pepper
  • In thin slices
  • 2 cloves of garlic
  • Crushed
  • 75 g of Palacios chorizo
  • 1 tablespoon of Cajun seasoning
  • 250 g of long-grain rice
  • 400 ml tomato sauce
  • 350 g of chicken

Preparation:

  1. Heat the oil in a frying pan with a cover, and fry the chicken for 5-8 minutes until golden. Remove and put to one side.
  2. Chop the onion and lightly fry for 3-4 minutes until soft.
  3. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for a further 5 minutes.
  4. Stir the chicken with the rice, add the tomato sauce and the stock.
  5. Cover and simmer for 20-25 minutes until the rice is cooked.
  6. Serve.
