Zucchini white sauce

Ingredients

  • Onion 80g
  • Zucchini 600g
  • Extra virgin olive oil 20g
  • Rice milk 100ml (when you want to replace cow's milk)*
  • Salt
  • Nutmeg

Did you know that with the help of a zucchini you can prepare a delicious white sauce without using flour? With much fewer calories than traditional white sauce, it is ideal for people who are watching their weight but don't want to deprive themselves of the flavor. Add it to your pasta or vegetable dishes.

METHOD

In a non-stick skillet add the finely chopped onion with a pinch of salt. Fry gently on a low heat for 5 minutes. After this time, put a lid on the skillet and leave to cook for a further 10 minutes, stirring occasionally.

Add the zucchini in pieces and add more salt. Cover again and leave to simmer for 30 minutes on a low heat. Stir occasionally.

Add the nutmeg and put it all in a bowl. Blend the mixture while adding the rice milk, until you get the desired consistency.

*You don't have to use vegetable milk; if you don’t have a dairy intolerance you can use cow's milk.

NUTRITIONAL COMMENT

If you want to avoid excess calories in your diet, you have an intolerance and have to avoid dairy products or wheat, or you simply want to try a new recipe, here you have this wheat (flour) and dairy-free white sauce that is really light (as the main ingredient is Zucchini).

The texture of the zucchini white sauce is creamier than traditional white sauce, and it is also less thick.

It can be used to accompany pasta dishes, and vegetables (broccoli or baked eggplant).
