King shrimp and vegetable crepes

Ingredients

  • 300 g of flour
  • 300 ml of milk
  • 2 eggs
  • 12 green asparagus
  • 3-4 carrots
  • 1 zucchini
  • 16 king shrimp
  • Extra virgin olive oil
  • Salt
  • Dill

These crepes are a different way of presenting vegetables and fish, which is very attractive for children to help them get used to them in their diet.

1. Make the crepe mixture
In a blender, mix the egg, flour, milk and a pinch of salt. Blend with the electric blender.

2. Make the crepes
Heat a skillet with a few drops of oil. Add a portion of the mixture and spread across the skillet. Cook on both sides until done.

3. Make the sauce
Sauté the shrimp heads in a skillet with a little oil. When they are well browned, add a splash of brandy and flambé. Add the tomato sauce, a little water and a few sprigs of dill. Cook the sauce for 10-15 minutes, then blend and strain.

4. Prepare the vegetables and cook them on the griddle.
Remove the bottom part of the asparagus and wash. Wash the zucchini and cut into long sticks. Peel the carrots and cut in 4 lengthwise. Put a little oil on a griddle and cook the vegetables. When they are almost done, season the shrimp and add them. Sauté briefly.

5. Fill the crepes and bake
Fill the crepes with vegetables and shrimp and bake.

NUTRITIONAL COMMENT

This dish provides quality proteins, the carbohydrates we need to give us energy, healthy fats, vitamins, minerals, antioxidants and fiber.

It can be accompanied with a little fried chorizo, after draining the oil, to give it a little extra flavor.
